Beef and Beer Casserole

Ingredients

750g (1 1/2 lbs) stewing steak, diced

flour

salt and pepper

2 tablespoons oil for frying

1 large onion, chopped

2 stalks celery, chopped

1 carrot, sliced

1 cup flat beer

1 teaspoon vinegar

1 bouquet garni

1 tablespoon chopped parsley

Method

Toss meat in flour seasoned with salt and pepper. Heat oil in a pan, add the meat and brown all over. Remove meat and place in a casserole dish. To the pan juices add onion and cook until soft, add celery, carrot and parsley, stir in flat beer, vinegar and bring to the boil, reduce heat. Add bouquet garni, simmer for 5 minutes then pour over meat in casserole dish. Cover and cook in a moderately slow oven for 1 - 1 1/4 hours. Discard bouquet garni at serving.
